Trust Tia Keenan, the fromager at Casellula, to make your own cheese flight instead of relying on the menu.  Dominick and I told her straight-up we had no reservations on any kinds of cheese, and we were soon rewarded with these selection of five cheeses, all from different regions and with some truly innovative pairings, like that beet chip with pesto. The stand-out was the blue cheese from Spain on the far right, which gave one helluva of a flavor—and I’m pretty sure my mouth did cartwheels and splits when I ate it with the accompanying chocolate pieces. Must find out the name of this cheese!
Intimate, cozy. In addition to the great cheese—but as if that wasn’t reason enough!—they offer a great wine selection (mostly Italian) and an array of more small plates. Looks like it belongs in the LES, but if it did, it would be even more packed to the gills, and then neither you nor I could ever get in, eh?
