My dad has forever ruined my entire family’s standards of sushi after introducing us to Ariake, a Japanese restaurant inside Shilla Hotel in Seoul.  I’m sure they have a separate menu offering regular sushi and sets, but I’ve only ever done the omakase every time I’ve been there.  You really haven’t tasted how good sushi can be until you’ve had it like this, and the splurge is completely worth it: rich, melt-in-your-mouth thin slices of things like yellowtail and abalone that, if you only ever thought tasted “fishy,” will completely alter your view.
Uni, or sea urchin, has a briney taste that I’ve never been a big fan of, but eat it really fresh (Ariake gets their fish shipped in from Japan every morning) and all you’re left is a buttery, refreshing creaminess. Here, it’s served  on top of a little bit of rice with some shredded cabbage and a dollop of wasabi.
